They are called “fresh” because they are not subject to an aging process. The texture of fresh cheeses is soft, sometimes creamy and their taste is reminiscent of fresh milk and mountain herbs.
The Tellino cheese is perfect for daily consumption in the family. Its cylindrical shape and its delicate and fresh taste adapt very well to the contemporary consumer who is looking for a light yet yummy food. The tellino is covered by a white bloomy rind. Our advice is to taste it with a redcurrant Valtellina preserve, with a slightly tart taste.
