A lifestyle that looks to the past to ensure the future. Milk used to produce our Bio line comes exclusively from certified farms in the Province of Sondrio.

Valtellina Casera PDO Bio

Aged 180 days

Valtellina Casera PDO Bio is a cheese with a centuries-old cheese-making tradition. When matured for over 180 days, it is infused with aromas and flavours reminiscent of dried fruit, and its paste becomes golden, crumbly and consistent. This product is ideal for long ripening, as long as it is carried out in a suitable place. The cheese affineur skilfully cures the cheeses every day, turning the wheels and moving them in the “casera” (cellar) depending on humidity and temperature. This cheese was once produced during the winter, when the cattle rested in the sheds after being back from the pastures. It is now produced all year long. Its name originates from “casera”, the cellar where cheeses are aged.
