On 23 and 24 September, Latteria di Chiuro will present two new products at B2Cheese in Bergamo, both made with the same 100% Valtellina milk as always.
Taking centre stage at the 2026 edition will be Valtellina Casera DOP, aged for over 300 days and available in grated form for the first time, and Alta Quota, aged at an altitude of 1,800 metres in Livigno.
The first grated cheese from Valtellina is made from a cheese with a long tradition in the region: Valtellina Casera DOP, aged for over 300 days before being grated and packaged. This extended ageing gives the cheese a firmer texture and a more distinctive flavour than younger Casera.
The grated Valtellina Casera DOP comes in 90 g bags, designed for everyday use in the kitchen: in lasagne, as the finishing touch to a risotto, to add a unique yet delicate flavour to bruschetta, or for gratinating oven-baked vegetables. The packaging also features a QR code linking to quick and easy recipes created specifically for this versatile product.
Alongside the grated cheese, Alta Quota will also make its debut. Made from Valtellina milk, it is aged in a cave at an altitude of over 1,800 metres in Livigno. Its high-altitude character can be seen and sensed even before the first taste: a milky-white paste, a dense and regular distribution of small holes, and a soft, elastic texture. On the nose, it offers notes of fresh curd and yoghurt, with a hint of gently warmed butter; on the palate, grassy and floral notes emerge alongside an immediate sweetness that leaves a clean finish without ever becoming cloying. It is a cheese that expresses the character of the high mountains, through both the temperature of the cave where it is aged and the seasonal qualities of the milk from which it is made.
