Aged for over 300 days, this organic semi-hard cheese represents the finest expression of Valtellina Casera PDO production. Daily care by master affineurs ensures constant monitoring, turning and repositioning of the wheels according to humidity and temperature. After a year of ageing, the cheese develops intense aromas and fragrances reminiscent of the fresh mountain air where it is born, while the paste becomes yellow, crumbly and firm.
