An unmistakable flavour, techniques handed down through generations of cheesemakers, and respect for the strict production rules that grant it Protected Designation of Origin status: Bitto PDO is a cheese with an extraordinary bond to the mountains of Valtellina. It is produced in summer on alpine pastures, where herds graze on fresh grass, using whole raw cow’s milk processed immediately after milking. The specification allows for the optional addition of a portion of goat’s milk, which gives it distinctive aromatic notes. Processing techniques have been passed down for millennia, as reflected in its Celtic-derived name “Bitu”, meaning everlasting—a name that tells of its remarkable ageing potential. Maturation can last for years in the “casera”, the cellar dedicated to cheese ageing.
Over time, it becomes one of the world’s rare meditation cheeses, to be tasted slowly to discover its flavours, aromas and fragrances.
