The result of a centuries-old dairy tradition, Valtellina Casera is one of the two cheeses from the Province of Sondrio protected by the Protected Designation of Origin. It is produced according to the PDO specification. In the past, Valtellina Casera PDO was made only in winter, using milk from cows resting in the stables after summer grazing. Today it is produced all year round, always with the same care and dedication. Milk processing follows strict food safety standards, after which the expertise of the affineurs comes into play. Delicate flavour with notes of dried fruit, straw-yellow paste with amber hues, fine and evenly distributed eyes: after at least 70 days of ageing, Valtellina Casera PDO is ready to be enjoyed on its own or to become the star – together with buckwheat, butter and cabbage – of the iconic local dish, pizzoccheri.
