The finest expression of Valtellina Casera PDO production. This cheese, protected by the Protected Designation of Origin, is an outstanding example of Valtellina’s dairy tradition. Carefully aged day by day by expert cheesemakers, after more than 300 days it develops intense aromas and a bold flavour, with notes of dried fruit and fragrances reminiscent of mountain air. The paste becomes yellow, crumbly and firm, perfect to enjoy with Valtellina red wines. The result of a centuries-old tradition preserved with care and protected by the PDO, Valtellina Casera was once produced only in winter, when herds rested in the stables after summer grazing. Today it is produced all year round, with the same passion.
