Born from a centuries-old tradition and produced with passion and rigour. With ageing, it develops a bold, genuine and aromatic flavour. Valtellina Casera PDO is one of the great cheeses of Valtellina tradition. When aged for over 180 days, it becomes richer in aromas reminiscent of dried fruit, and the paste turns golden, firm and crumbly. It is a cheese suited to long maturation, provided the ageing environment is appropriate and the hands of expert affineurs guide the process. In the past, Valtellina Casera PDO was produced only during winter, when herds rested in the stables after summer grazing.
Today it is produced all year round, with the same passion. Its name comes from “casera” – the cellar where cheeses were traditionally aged.
