Sweet and flavoursome, with a taste reminiscent of freshly milked milk: Alpino is a semi-hard cheese produced by Latteria di Chiuro, inspired by the long dairy tradition of Valtellina. Only whole cow’s milk is used, processed within a few hours of milking. Before reaching the table, each wheel is aged for a minimum of 25 days. Food safety and respect for natural processing times are core principles of Latteria di Chiuro. Alpino is a perfect ingredient for simple yet tasty recipes. It has a thin rind that tends to darken over time, while the paste is compact and ranges in colour from milky white to pale yellow in more mature wheels.
