Valfontana is a sweet and delicate cheese, named after the green valley just a few kilometres from the dairy. Its aroma recalls milk and mountain flowers. Produced with Valtellina cow’s milk, it is aged for just over a month before reaching the table. Valfontana has a delicate flavour with floral and fruity notes. The paste is characterised by pronounced and uniform eyes, while the rind is edible as it is untreated, just like in the past. Genuine and wholesome, this cheese is ideal for traditional recipes such as pizzoccheri and polenta taragna, as well as for great classics of Italian and Lombard cuisine, including risottos, pasta dishes and baked preparations.
