A rounded and enveloping flavour, achieved through long maturation in a particularly humid environment, like a cave. Chiuro Stagionato is a truly special cheese, the result of an ancient tradition and produced with the same passion as ever. Made entirely with cow’s milk from our supplying farms, Chiuro is cave-aged for 150 days in a slow, gradual process expertly managed by our cheesemakers. The result is a cheese with a compact paste and very fine, evenly distributed eyes. A rounded, enveloping aroma with floral and dried fruit notes. A range of flavours to discover, especially when enjoyed with a glass of Valtellina Sforzato wine. Chiuro is also perfect in the kitchen, adding refined nuances to traditional Alpine dishes or starring in creative recipes.
