Scimudin della Valtellina is the typical small cheese of rural tradition, as its name suggests: in Lombard dialect, “Scimud” means cheese. In the past, every family produced it with milk from their own livestock and consumed it after a short maturation. Today, at Latteria di Chiuro, it is produced according to the highest standards of quality and food safety, while respecting tradition. Made with cow’s milk from our supplying farms, it reaches the table after a brief maturation, just long enough to develop its characteristic untreated and edible white bloomy rind and its soft, elastic texture. Its fresh, sweet, milky flavour makes it perfect for any occasion, also delicious with a drizzle of Valtellina honey.
